Nothing says Autumn like warm cups of something and the need for sweaters on weekend walks.
So it is with great pleasure that I give you Hannah’s unbelievably Autumnal granola that will make your mornings all that bit fresher and flavoursome.
Hannah was one of my campers when I worked at Camp treetops in 2001. Then this year on our return to camp as a family we had the joy of sharing a house with Hannah.
She headed up one of the kitchens at camp and added her wonderful knowledge and creativity in the meals we ate.
Her brand “The cereal killer” is awesome. As above, Hannah understands flavour combinations and makes them work.
TURMERIC SPICE GRANOLA
1/2 cup canola oil
1/2 cup coconut oil
1/2 cup maple syrup
2 Tablespoon honey
1 teaspoon salt
1 teaspoon vanilla extract
8 cups oats
1/2 to 1 cup chia seeds
1/2 cup flax seed
1 cup chopped almonds
1 cup coconut flakes
2 teaspoons ground ginger
1 teaspoon cinnamon
2 teaspoon tumeric
-preheat oven to 260 F or 125oC
-Mix all dry ingredients together in a bowl
-Heat oils, sweeteners, and salt over the oven. Whisk together until boiling. Let boil for one minute. Turn off heat, add vanilla extract. Pour liquid over oat mixture, stir well.
-Line a 18 by 13 inch (46 by 33cm) sheet tray with parchment paper.
-Pack the granola onto the tray forming a thick even layer.
-Cook for up to two hours without stirring.
-Let granola cool completely before removing from the tray.
-Add any dried or fresh fruit before eating.
