I don’t know about you, but I think the best way to feel good and to enjoy my foods is to have an idea at the start of the week of what I am going to eat.
Especially if I am going to be training quite a bit at the gym, I love to know I have PLENTY of meals prepared in advance, or at least an idea of what I will have.
One weekly staple in our house is slow cooked chicken breasts. They accommodate packed lunches for a few days. I will post my simple slow cooked chicken recipe very soon.
So all I did was add some tasty lemon infused spicy spiralled cucumber and sunflower seeds to my cooked chicken to make a great packed lunch.

-Breast of cooked chicken sliced
-Half a cucumber
-Juice of half a lemon
-Zest of half a lemon
-1/2 Tbsp cumin powder
-Sprinkle of sea salt
-Handful sunflower seeds
* Spiral cucumber into lovely long ribbons
*Add to a large bowl with the lemon juice, lemon zest and cumin powder.
*Mix ingredients together
*Add to lunch box, place chicken on top of cucumber mixture
* Sprinkle with sunflower seeds and sea salt.
