Every Easter my husband’s family head to Donegal for the Easter weekend.
It is a beautiful tradition when we spend time relaxing by the fire, talking about this and that and moving at the most leisurely pace.
The most tasking part of the trip is to see if we can use every item in the fridge by the end of the trip, that’s how laid back an affair it is.
Maybe it’s because I have the kids now and I love them seeing their cousin, or because my own Dad isn’t here to enjoy similar ventures with my Mum, Brother, sister in law and us. But I totally dig these breaks away.
Normally my other sister in law Aoife makes a mean fish pie for good friday but this year she couldn’t make it so I used the salmon we had bought the day before we left.
As the photo implies, we were all pretty keen to get started but I managed to convert people over to quinoa during this sitting, and everyone’s belly was full.
Hopefully you an get some ideas from this and real enjoy sitting together with some friends or family.
Nothing pleases me more than people sitting around a table enjoying the food I create.
-Salmon fillet baked in tent foil with olive oil and butter and seasoning
– Anna jones brocoli, sugar snap peas with dressing of tahini, juice of 1 lemon, maple syrup, pistachios crushed
– roasted cauliflower in olive oil with seasoning and chilli flakes
– quinoa and bulgar wheat cooked in stock with feta, sweet potato, chopped dates, pumpkin seeds
-Spinach and rocket salad with apple cider vinegar dressing
Most dishes here are easy to make in advance and there is lots of flavour and texture and colour.
The bad news is that it’s not the most kid friendly. My kids certainly didn’t like the quinoa and feta cheese, only one of them ate the salmon and as a result they had corn on the cob and cheesy potatoes!!
