What the heck is quinoa!? I here you say.
Well it’s an expensive grain high in protein. It’s very bland at first and if you couldn’t be bothered trying it then feel free to substitute with rice- I find it does a similar job, in terms of taste at least.
Use this recipe as a warm side dish or cold leftovers with smoked salmon or a boiled egg.
- 1 cup uncooked quinoa /rice
- 1/2 chicken or vegetable stock cube
- Handful chopped cranberries or dates
- pumpkin seeds
- Pistachio or cashew nuts
- squeeze lemon juice
-Wash quinoa/ rice well before cooking in the stock cube.
Side notes – Quinoa soaks up the water quickly and often so make sure there is enough water in there.
– A friend melts butter in her heavy based pan along with washed rice grains before adding cooking water. This technique mirrors the making of pilau rice where butter or oil helps to stop the rice sticking together, keeping it fluffy. It also adds flavour to the overall outcome.
-When quinoa/rice is cooked add all other ingredients and serve immediately.
